Ingredient Notes
- Jasmine rice - we recommend jasmine rice for this recipe—white rice or brown rice will work (see this post for an easy way to cook brown jasmine rice). For best results, follow the package directions. If using brown rice you will likely need more liquid, so make sure you add enough water.
- Lean ground beef - we use ground beef for this recipe, but you could choose to use other types of ground meats such as ground chicken or ground turkey.
- Olive oil or sesame oil, divided
- Red bell pepper, broccoli, peas in a pod - chop the bell peppers and turn the broccoli into broccoli florets. You can use sugar snap peas or snow peas based on your preference. You can also use other veggies of choice such as onion, carrots, bok choy, or edamame beans. All are good options!
- Minced ginger - you can use fresh ginger or ginger paste.
- Minced garlic - we recommend minced garlic, but you can use a smaller amount of garlic powder in a pinch if necessary.
For the quick teriyaki sauce:
- Low sodium soy sauce - you can also use coconut aminos or a gluten-free soy sauce if you need a gluten-free version of this recipe.
- Chicken broth or water - you can use chicken broth to add a little bit more flavor.
- Honey - you can also swap the honey for maple syrup or brown sugar. If you use brown sugar make sure the sugar dissolves completely.
- Rice wine vinegar - also known as rice vinegar
- Sriracha
- Arrowroot powder or cornstarch - this will act as a thickening agent to help the sauce not be too runny.

Step by Step Directions
For the full recipe instructions, scroll down to the recipe card at the bottom of the page.
Step 1: Begin by cooking the jasmine rice according to package instructions.
Step 2: Prepare the vegetables. Chop the bell pepper, cut the broccoli into small florets, and wash the peas if needed. Set aside.
Step 3: Next, add 2 tsp of olive or sesame oil to a large skillet and turn to medium heat. Add the ground beef to the pan. Using a wooden spoon or a spatula, break up the meat into smaller pieces. Cook for about 5-7 minutes, or until the meat is no longer pink. Drain the excess grease (you can simply drain off the grease or use paper towels to help soak it up).
Step 4: Add the vegetables to the cooked beef and continue to cook for 2-3 minutes, until the vegetables begin to soften.
Step 5: In a separate bowl, whisk the sauce ingredients together, including the cornstarch, to create the teriyaki sauce mixture.
Step 6: Combine the teriyaki sauce with the meat and the veggies. Mix well and continue to simmer until the sauce has thickened, about 2 minutes.
Step 7: Divide the rice into individual bowls. Add the teriyaki beef and vegetable mixture on top of the cooked rice. Enjoy!

- You could also use the sauce as a teriyaki marinade for other meat such as chicken, fish, or flank steak (and make teriyaki steak bowls).
- We highly recommend making the homemade version of the teriyaki sauce for this recipe. However, if you don't want to make your own sauce, you can purchase a bottle of teriyaki sauce from the store for ease.
- Serve with a side of egg rolls or spring rolls.
