Ingredient Notes
- Butter - melt the butter and let it cool to room temperature so it is still liquid, but no longer hot. You can swap for a liquid oil such as olive oil or vegetable oil, but the flavor will differ and the cornbread won't be as rich.
- Honey - honey adds the perfect touch of sweetness to this cornbread
- Greek yogurt - use plain Greek yogurt (can swap for sour cream if needed).
- Milk - you can use regular milk (1%, 2%, or whole milk) or a milk alternative.
- Eggs
- Vanilla extract
- Flour - use all purpose flour for this recipe.
- Cornmeal - we like to use yellow cornmeal but you can use white cornmeal if needed. White cornmeal is generally more fine in texture with a more subtle corn flavor.

Step 1: Preheat the oven to 375 degrees F. In a large mixing bowl, add the wet ingredients together—the melted butter, honey, Greek yogurt, milk, eggs, and vanilla. Whisk well.
Step 2: Next, add the dry ingredients: the flour, cornmeal, baking powder, and salt.
Step 3: Mix gently until combined.
Step 4: Line an 8x8 square pan with parchment paper. Add the cornbread batter to the prepared pan and smooth the batter into an even layer.
Place in the preheated oven and bake for 22-28 minutes or until the top of the cornbread is golden brown and the center is fully set, or when a toothpick comes out with only a few moist crumbs on it.
Tips & Variations
- You could also cook this cornbread in a cast iron skillet, but note that the baking time time may vary.
- If you want to make cornbread muffins, simply place the batter in a muffin tin (grease well or use muffin liners) and reduce the cooking time.
