- Sweet potatoes - if you prefer plain potatoes, those will work great as well.
- Olive oil
- Ground turkey or ground beef - feel free to use either here

- Salsa - any salsa will work great here, so use whatever you prefer. Black bean salsa, regular salsa, tomatillo salsa, etc. You could also use enchilada sauce instead for a unique flavor.

- Juice from a lime
- Toppings of choice - some options include creamy guacamole, shredded cheese, hot sauce, sour cream (or vegan sour cream or plain greek yogurt), corn, salsa, green onions, black beans or pinto beans, jalapeños, corn, fresh cilantro, crushed tortilla chips, fresh tomatoes, or red onion. You can top them in different ways to mix it up and fit your personal preferences!

Step by Step Directions

Step 1: Preheat the oven to 425 degrees. Line a baking sheet with parchment paper. Wash and dry the sweet potatoes. Poke the sweet potatoes several times with a fork on all sides. Place the sweet potatoes on the lined baking sheet in the oven. Depending on the size of the sweet potatoes, bake for 45 minutes to an hour or until the potatoes are very soft and easily pierced through with a fork or knife.
Step 2: While the potatoes cook, prepare the filling. Place a medium pan on the stove over medium heat. Add the olive oil. When the olive oil is hot, add the ground meat. Break the meat into small pieces while it cooks. Cook the meat for 5-7 minutes, or until the meat is fully cooked through. Drain any excess liquid or grease.
Step 3: Add the white onion, bell pepper, salsa, cumin, garlic powder, chili powder, and salt to the pan. Mix until well combined. Let the mixture continue to cook on medium heat for another 4-5 minutes until the onions and bell peppers are soft
Step 4: Remove the pan from the heat and add the chopped cilantro and lime juice. Use half or the whole lime depending on your preference
Step 5: When the sweet potatoes are fully cooked and fork tender, use a knife to cut them in half and push from both sides to make a center in the sweet potato.
Step 6: Fill the sweet potato with the filling and add any toppings of choice.
Tips & Variations
- We prefer to use our own perfect blend of spices, but you can also use taco seasoning if you prefer. Add enough until you're satisfied with the flavor.
- For a vegan or vegetarian version, use 2 cans of black beans instead of meat for black bean stuffed sweet potatoes.
- You could also swap the baked sweet potato and use sweet potato fries to make "fry nachos".
- The cooking time for the sweet potatoes will vary based on the size of your sweet potatoes. Be sure to cook them until very tender.
