
There are some nights (let’s be honest, most nights) where you need a meal that is easy, comes together quickly, has minimal cleanup, and is of course tasty. Enter this pesto chicken sausage and veggie sheet pan! This recipe checks each of those boxes. All you have to do is cut up the veggies and chicken sausage, toss it in pesto and spices, and bake! It only takes one pan, so the easy cleanup is an additional win.

What ingredients do you need?
Chicken sausage
Our favorite chicken sausage to use for this recipe is Aidell’s chicken apple sausage or Gilbert’s Aloha Chicken Sausage.
Veggies
We like to use bell pepper, red onion, broccoli, and sweet potatoes for this sheet pan recipe, but you can choose your favorite veggies or the ones you have on hand. Other ideas include zucchini, mushrooms, Brussel sprouts, cauliflower, or butternut squash to name a few.
Pesto
Our favorite pesto options are the Kirkland Pesto and Trader Joe’s Vegan Kale, Cashew & Basil Pesto (which is dairy-free for those who need it!).
Spices
While a lot of the flavor comes from the pesto, we like to dial it up even further by adding salt, garlic powder, and Italian seasoning.
What equipment do you need?
There’s not much that you need to make this dish come to life!
- Cutting board and knife
- Baking sheet lined with parchment paper or aluminum foil
- Large bowl
How is it done?
First, start by cutting the bell pepper, red onion, and sweet potatoes into pieces that are about ½-1 inch in size. Cut the broccoli into small florets and slice the chicken sausage into ¼ inch rounds. Place all veggies and chicken sausage into a large bowl.
Add the olive oil, salt, garlic powder, and Italian seasoning to the bowl. Mix until the veggies and chicken sausage are evenly coated.
Evenly spread the veggies and chicken sausage out onto the lined baking sheet. Place in the oven and bake for 25-30 minutes, or until the sweet potatoes are easily pierced with a fork. Once you remove the pan from the oven, spoon the pesto over the pan and mix until the veggies and sausage are evenly coated.
Anything else to consider?
This recipe is super flexible to your preferred veggies or whichever veggies you have on hand. You can even chop up the veggies beforehand and store them in the fridge until you are ready to throw it all together. This creates one less step during the dinner prep madness!
Is it GF/DF?
This recipe is gluten-free and can easily be made dairy-free simply by selecting a dairy-free pesto. Our favorite, as mentioned above, is the dairy-free pesto from Trader Joe’s.

Ingredients
- 1 medium red bell pepper
- 4 links chicken sausage
- 1 medium red onion
- 1 head of broccoli
- 2 medium sweet potatoes
- 1 tablespoon olive or avocado oil
- 1 teaspoon kosher salt
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- ¼ cup pesto
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
