Ingredient Notes
For the ramen
- Fresh veggies - green onion, zucchini, red bell pepper
- Sesame oil - we love the flavor that sesame oil adds to this dish, but you can swap it for another oil such as olive oil or avocado oil.
- Lean ground meat of choice (chicken, beef) - our favorite protein for this dish is a ground meat such as ground chicken or ground beef. It is quick to cook and mixes in well to the ramen. However, if you have another preference for your choice of protein, you can easily adapt this recipe to your personal preference.
- Ramen noodles squares - you can use the classic instant ramen noodles or ramen rice noodles (also sold at Costco). If you aren't a fan of ramen noodles, you can always try udon noodles or soba noodles.
For the homemade stir fry sauce
- Low sodium chicken broth or bone broth
- Low sodium soy sauce or tamari - use tamari or coconut aminos for a gluten-free option. These can be found at most grocery stores.
- Rice vinegar
- Minced garlic - you can use fresh garlic or pre-minced garlic (in the jar or frozen cubes).
- Coconut sugar or brown sugar
- Cornstarch or arrowroot powder

Step by Step Directions

Begin by cutting the green onions, zucchini, and bell pepper. Set aside on a cutting board or plate. Next, fill a medium sized pot with water and bring to a boil.
Place a non-stick skillet on the stove over medium-high heat. When the pan is hot, add the sesame oil and ground meat. Break apart the meat into smaller pieces and cook completely until it is no longer pink. Drain any excess liquid.
Add the cut veggies to the pan with the chicken or beef and cook until the vegetables are softened, stirring regularly.
While the veggies are cooking, add the ramen noodles to the pot of boiling water (do not put in the seasoning packets). Cook the noodles for 3-4 minutes (or follow the cook time on the package instructions), drain the noodles, and add the cooked noodles to the skillet with the meat and veggies.
Measure out the sauce ingredients into a medium bowl and mix until well-combined.
Add the sauce to the skillet and stir until the meat, veggies, and noodles are combined and the sauce evenly coats them. Let the sauce simmer for 1-2 minutes until thickened.
Tips & Variations
- We recommend breaking apart the ramen noodles before cooking them. This will make it easier to mix the noodles with the veggies, meat, and stir fry sauce.
- Sprinkle with sesame seeds and a drizzle of Sriracha if desired.
- You can easily switch out the zucchini and bell peppers for other fresh vegetables of choice or add extra vegetables. Some other options include snow peas or snap peas, bok choy, napa cabbage or green cabbage (or even a coleslaw mix), bean sprouts, baby corn, green beans, carrots, broccoli florets, or water chestnuts.
- Feel free to use your preferred choice of protein as well—the ground meat can easily be switched out for another type of meat.
