Ingredient Notes

- Chicken bone broth - We use chicken bone broth as the base for the ramen broth, but regular chicken broth or low-sodium chicken broth will work, too. If using low-sodium broth, you may want to adjust the salt to taste.
- Ramen noodles - Any instant ramen noodles will work. You don't need to use the flavor packet since we're making our own seasoning for the broth. You can also use fresh ramen noodles, although the cooking time may vary. Another option we like is rice ramen noodles (we like the Lotus brand).
- Rotisserie chicken - Shredded rotisserie chicken makes this recipe especially quick and easy. Leftover chicken breasts or other cooked chicken can also be used.
- Nutritional yeast - Nutritional yeast adds a subtle savory, cheesy flavor and a little extra depth to the ramen broth. If you don't have it, you can leave it out, although the broth will have slightly less depth of flavor.

Recipe Tips & Variations
- Skip the flavor packet. If you're using instant ramen, you won't need the seasoning packet. The broth is seasoned separately, giving you more control over the flavor and sodium.
- Add fresh veggies. Bok choy, shiitake mushrooms, bean sprouts, green onions, or other vegetables are all great options. Add vegetables that need more cooking time with the noodles and stir in quick-cooking vegetables toward the end.
- Add an egg. A soft-boiled egg or jammy egg is one of our favorite additions to a bowl of ramen.
- Add some heat. Chili crisp, Japanese chili oil, chili flakes, or a drizzle of sesame oil can add a great pop of flavor.
- Try miso ramen. Stir a spoonful of miso paste into the hot broth for a different flavor profile. Start with a small amount and add more to taste.
- Add sesame seeds and green onions. A sprinkle of sesame seeds and sliced green onions makes an easy finishing touch.
- Use different proteins. Leftover chicken, chicken breasts, pork belly, or even a soft-boiled egg can all be used to change up your ramen bowls.
- Make it more filling. Add extra chicken, vegetables, an egg, or other favorite toppings for a heartier meal.

Step 1: In a medium saucepan, add the chicken bone broth, garlic powder, onion powder, nutritional yeast, turmeric, salt, and pepper. Whisk to combine. Bring the broth to a boil over medium-high heat.

Step 2: Once boiling, add the ramen noodles and cook for 3-4 minutes, or until softened, breaking them apart gently with a fork or tongs. If you’re adding any vegetables, add them here.

Step 3: Add the shredded rotisserie chicken to the pot and stir to combine. Let simmer for 1-2 minutes, until the chicken is warmed through.

Step 4: Ladle the ramen into bowls and top with any optional add-ins of choice.
Homemade Ramen FAQs
Because the ramen noodles continue absorbing the broth as they sit, this recipe is best enjoyed fresh. If you have leftovers, store the ramen in an airtight container in the refrigerator for up to 2–3 days. The noodles may become softer and absorb some of the ramen broth, but it will still be enjoyable. For the best texture, you can also store the broth and noodles separately if you know you'll have leftovers. Reheat the broth and chicken on the stovetop or in the microwave, then add freshly cooked ramen noodles before serving.
Freezing: We don't recommend freezing the assembled ramen because the noodles can become mushy once thawed. The broth itself can be frozen, though, if you'd like to prepare it ahead.
This recipe is designed to make a flavorful ramen broth without the seasoning packet, which also lets you control the amount of sodium. If you prefer to use the packet, you can omit the garlic powder, onion powder, nutritional yeast, salt, and pepper and season the broth according to your preference.
Any instant ramen noodles from the grocery store will work. You can also use fresh noodles/homemade ramen noodles or another type of thin Japanese noodle, but cooking times will vary, so follow the package directions.
