The last time we were together we went out for dinner twice—once to get Thai food and once to get pizza. Those are two of our favorite food options! Here we have combined the two and created Thai Chicken Flatbread Pizzas. It may sound a little strange at first, but we promise this recipe brings together the best of both worlds perfectly. Let’s dive in!
What ingredients do I need?
Flatbread or naan bread
You can use any flatbread or naan of your choice! If you choose to use naan, our favorite naan bread is the Stonefire Mini Naan. You can usually find it at Walmart or Target or you can buy it in bulk at Costco. If you have extra flatbread or naan that you don’t use, you can simply freeze it and pull it out to thaw the next time you want to use it. If you need a gluten-free option, select your favorite gluten-free flatbread.
Peanut sauce
We of course use our favorite peanut sauce for this recipe! You can find it here! This will likely make more than you need. If you have extra, you can freeze it in an airtight container and warm it up the next time you are ready to use it again.
Shredded or chopped chicken
There are many ways you can go about making shredded or chopped chicken for this recipe. You can use the meat from a rotisserie chicken or cook chicken following your preferred method and either shred or chop it after it is cooked.
Shredded mozzarella cheese
Any shredded mozzarella cheese should work just fine for this recipe. If you need a dairy-free option, choose a dairy-free cheese or omit the cheese all together.
Shredded carrots
We prefer to buy a bag of pre-shredded carrots to reduce the prep time, but if you do not have any on hand or they are unavailable near you, feel free to grate a few carrots!
Chopped cilantro
Chopped cilantro adds a beautiful flavor and appearance to these Thai chicken pizzas.
Optional toppings
Peanuts, Balsamic Glaze, chopped green onion, red pepper flakes or Sriracha
While optional, we love to add chopped peanuts and chopped green onion on top of our pizzas. If you like a little bit of a kick, try adding either red pepper flakes or a drizzle of Sriracha. Balsamic glaze is also a yummy addition.
What equipment do you need?
- Baking sheet lined with parchment paper
- Spoon
- Measuring cups and spoons
- Medium frying pan
- Cutting board and knife
How do I make these flatbread pizzas?
- Begin by preheating the oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper for easy cleanup.
- Lay each flatbread on the baking sheet and begin to assemble the pizza.
- Use a spoon to spread a thin layer of peanut sauce (about 2 tbsp) on the flatbread.
- Add ½ cup of chicken to each flatbread and spread out evenly (you can use less chicken if using a smaller flatbread).
- Next, sprinkle ¼ cup of mozzarella cheese on each flatbread. Feel free to add additional cheese if desired or skip it all together.
- Repeat this process until all 4 flatbreads are assembled.
- Place the baking sheet into the oven and bake for 8-10 minutes, or until the cheese is melted and golden brown.
- This next step is important to ensure you have a crispy crust. Place a medium frying pan on the stove over medium heat. Add a light spray of olive or avocado oil to the pan. Once the pan is hot, place the flatbread in the pan, toppings facing up. Let the bottom of the crust cook until golden brown and crispy, about 2-3 minutes. Repeat this process for each flatbread.
- Sprinkle each flatbread with shredded carrots, and chopped cilantro.. Feel free to top with additional peanut sauce, balsamic glaze, crushed peanuts, chopped green onion, red pepper flakes, or Sriracha if desired.
Are they (GF/DF)?
These Thai chicken flatbread pizzas can easily be made both gluten-free and dairy-free. For our gluten-free friends, simply select a gluten-free flatbread/naan and make sure you use gluten-free soy sauce when making the peanut sauce. For dairy-free, use dairy-free shredded cheese or choose to remove the cheese all together.
