Ingredient Notes
- Pasta - we like using penne or bowtie pasta but feel free to use your pasta of choice! Shells or rigatoni would work as well.
- Rotisserie chicken - we love to use rotisserie chicken for this recipe but feel free to use grilled chicken or leftover chicken that you have on hand.
- Basil - use fresh basil for this recipe.
- Cherry tomatoes - sweet cherry tomatoes are our favorite, but you can also use grape tomatoes.
- Mozzarella pearls - we love using the mini mozzarella balls for this recipe. If you aren't able to find these at your grocery store, you can use the fresh mozzarella balls and cut them into cubes. We highly recommend using fresh mozzarella cheese.
- Balsamic vinegar - use regular balsamic vinegar over white balsamic vinegar.

How to Make Easy Caprese Chicken Pasta Salad

Step 1: Place a large pot of salted water on the stove over medium high heat. Cook the pasta al dente according to package instructions. Once the pasta is cooked, drain the water and rinse the pasta in cool water to stop the cooking process.
Step 2: Next, prep the dressing. Add the balsamic vinegar, maple syrup, dijon, garlic, salt, and pepper to a blender or food processor. Blend for 5-10 seconds until smooth. Next, slowly add the oil in a small stream as you blend the mixture on low. The dressing should be smooth and creamy when fully mixed.
Step 3: Add the cooled pasta, shredded chicken, tomatoes, basil, and mozzarella to a large mixing bowl.
Step 4: Add the desired amount of dressing.
Step 5: Toss until evenly coated.
