- Raw almonds - be sure to use raw almonds instead of roasted almonds for this recipe. The almonds will cook on the stove.
- Pure maple syrup - pure maple syrup adds the perfect touch of sweetness. Be sure to use pure maple syrup with no additives. If you want to use granulated sugar instead, follow the instructions located in the notes section of the recipe card.

Step 1: Place a medium saucepan on the stove over medium-low heat. Add the raw almonds, maple syrup, cinnamon, and salt and mix well.
Step 2: Continue to stir constantly while the maple syrup begins to evaporate. Be patient as it will take 8-10 minutes.
Step 3: The almonds are ready when the mixture is no longer wet and the maple syrup has crystallized and stuck onto the almonds. Remove the pan from the heat and transfer the almonds to a separate bowl to cool or sheet pan to cool. Allow them to cool completely before serving.
Tips & Variations
- You can easily swap the almonds for any other raw tree nuts. You could also do a nut mix with two kinds of nuts.
- You can use granulated sugar instead of maple syrup. You will need to add 2 tablespoons of water to the pan with the sugar first to dissolve the sugar before adding the almonds and proceeding with the recipe. Use the same directions for brown sugar.
- Feel free to adjust the cinnamon level to your preference.
- These almonds make great Christmas gifts. Add almonds to clear bags or mason jars and tie it with a pretty ribbon and you're set! They also look cute served in paper cones like they use at the Christmas markets.
- You can also let the almonds cool on a cookie sheet with parchment paper in a single layer.
