Ingredient Notes
- Olive oil or butter - you'll just need a little bit of olive oil or butter to help cook the onion, carrots, and garlic.
- White onion - feel free to swap with a yellow onion if needed.
- Carrots - we like to dice large carrots for this recipe.
- Minced garlic
- Salt
- Dried thyme - you can use fresh thyme too!
- Dried rosemary
- Black pepper
- All purpose flour
- Chicken broth or chicken stock
- Milk - if you want a richer, creamier sauce you can use whole milk, half and half, or heavy cream. Either way it will be a delicious creamy soup
- Potato gnocchi - you can find store-bought gnocchi at most local grocery stores, such as this Gia Russa gnocchi. You can also make your own homemade gnocchi. Fluffy gnocchi are the perfect bite-sized pieces for this delicious soup.
- Rotisserie chicken or other cooked and shredded chicken - rotisserie chicken is a great option for ease and requires minimal preparation, as does leftover chicken you might have on hand. Any pre-cooked chicken should work too! You can use boneless skinless chicken breast or chicken thighs.
- Fresh spinach
- Fresh lemon juice

Step by Step Directions

Step 1: Begin by dicing the onion and carrot. Add the olive oil or butter to the pot and turn to medium heat. Add the onion and carrot to the pot and cook for 3-4 minutes, until slightly softened.
Step 2: Add the minced garlic, salt, thyme, rosemary, and black pepper. Stir until well combined and cook for another 1-2 minutes.
Step 3: Add the flour and stir until the vegetables are evenly coated with the flour.
Step 4: Next, slowly add the chicken broth and milk and continue to stir until everything in the pot is combined. Continue to stir until the broth thickens.
Step 5: Once the broth has started to thicken, add the gnocchi, chicken, and spinach to the pot. Cook on medium heat until you have tender gnocchi (gnocchi cook quickly, typically in 2-3 minutes) and the chicken is warmed through. Add the lemon juice, stir, and remove the pot from the heat.
Add additional salt and lemon juice to taste. Serve with freshly grated parmesan if desired. Enjoy!
Tips & Variations
- Feel free to top with freshly grated parmesan cheese or red pepper flakes. It is also delicious served with some crusty bread!
- You can also make your own gnocchi/homemade dumplings if you have more time.

If you want to freeze this soup, we would recommend freezing it without the gnocchi. Once cooked, the gnocchi will go mushy once it is frozen and reheated. Simply toss the gnocchi in when reheating the soup for the most fresh option!
