Ingredient Notes
- Sweet potato - we know it's common to think of adding the classic breakfast potatoes or hash brown to a breakfast dish, but we thought we'd mix it up a little bit and try adding diced sweet potato instead! It is a fun and tasty addition to this frittata.
- Red bell pepper and white or yellow onion - we felt that red bell pepper and onion were essential in creating the southwestern flavors for this dish. If you don't have a red pepper on hand, you can use an orange, yellow, or green pepper instead.
- Turkey bacon - we decided to use turkey bacon for this recipe, but feel free to use your favorite bacon or breakfast sausage instead.
- Garlic powder, cumin, chili powder, salt - the spices that create the best flavor for this dish!
- Cottage cheese or shredded cheese - cottage cheese has been in the spotlight lately and we love it as an addition to this frittata. Shredded cheese is a great option as well, you could try using cheddar cheese or pepper jack cheese to give it a little kick. We love the addition of cheese to this frittata, but if you are dairy-free, we made it optional. It will still be great without it!
- Whole eggs or egg whites - take your pick! Both are delicious options.

Step by Step Directions

Step 1: Preheat the oven to 375 degrees Fahrenheit. Dice the turkey bacon, sweet potato, red pepper, and onion into small pieces. Add them to a pan over medium heat with the olive oil, garlic powder, cumin, chili powder, and salt. Let the veggies and turkey bacon cook for 5-7 minutes, or until the turkey bacon is cooked and the veggies are tender. Remove the pan from the heat and let the mixture cool.
Step 2: In a medium bowl, whisk the eggs. Add the cottage cheese or shredded cheese to the egg mixture and whisk until combined.
Step 3: Once the veggie and turkey bacon mixture is cooled, pour egg mixture into the pan and stir until combined. Pour the combined mixture into a greased 10-inch oven safe skillet.
Step 4: Bake for 23-27 minutes, or until the center of the frittata is set and fully cooked through. Once the frittata is fully cooked, remove it from the oven and let it cool 10 minutes before serving. Serve with your favorite toppings and enjoy!
Tips & Variations
- While this frittata is packed with flavor on its own, there are several toppings you can try with it: hot sauce, a dollop of sour cream, salsa, guacamole, cilantro, green onions, and red pepper flakes would all be great to pair with it.
- If you are looking to mix it up a little bit, you could try adding some black beans, breakfast sausage, ground beef or ground turkey, or other veggies such as spinach, zucchini, or mushrooms. The best part of frittatas are that they are so customizable based on what you need to clear out of your fridge!
- This recipe would also be great to use to make smaller "egg muffins" by pouring the mixture into the individual cups of a muffin tin. Note however, that not as much baking time will be required, so you will need to watch closely!
