- Beef stew meat - you can buy stew meat already cut into cubes at most grocery stores. You can also buy a beef chuck roast and cut it into smaller pieces (about 1 inch) on your own. Remove any large chunks of fat. You can use a different type of beef as well, based on your preferences, but most beef stew meat is made from a chuck roast.
- Yellow onion - can swap for white onion too.
- Carrots - we like using chunks of whole carrots for this recipe but you can use baby carrots was well.

Step 1: In a large skillet, heat oil over medium-high heat. Generously season beef stew meat with salt and pepper and trim excess fat as needed. Add beef stew meat in a single layer (work in batches if needed) and sear on all sides until browned. Transfer the browned beef to your crockpot.

Step 2: To the same skillet, add diced onion. Sautรฉ for 2โ3 minutes, until fragrant.

Step 3: Add the garlic and stir.

Step 4: Stir in the tomato paste and cook for 1-2 more minutes, until the tomato paste is a rusty color. Add in a splash of the beef broth to help release any bits that are stuck to the bottom of the pot.

Step 5: Transfer mixture to the crockpot with the beef. Add carrots and potatoes to the crockpot.

Step 6: Add in the Worcestershire sauce and 2 cups of beef broth. Sprinkle in kosher salt, black pepper, dried thyme, and add the bay leaves. Gently mix until combined.

Step 7: Cover and cook on low for 7-8 hours, until the beef is tender and the vegetables are soft. In the last 30 minutes of cooking, whisk together the cornstarch or arrowroot and water in a small bowl to make a slurry. Stir the cornstarch slurry into the stew. Cover and cook for the remaining time until the stew thickens.
Remove bay leaves before serving. Taste and adjust seasoning as needed.
