Ingredient Notes

- BBQ sauce - choose your favorite! A few options include Stubbs, Kinder's, Sweet Baby Ray's, and Primal Kitchen.
- Russet potatoes - we recommend russet potatoes as they have the most surface area to serve the BBQ pork and slaw. However, you could always use large red potatoes or Yukon gold potatoes.

Step 1: Start by cutting the pork tenderloin into three-inch pieces and remove excess fat. This will help make the strands of shredded pork shorter and easier to eat once cooked.
Spray the slow cooker with non-stick spray. Add the pork tenderloin, white onion, โ cup of the BBQ sauce, minced garlic, and smoked paprika to the slow cooker. Let the pork cook for 4 hours on high.
Step 2: When you have about one hour left of cooking time for the pork, begin preparing the other components. Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.ย
Wash and dry the potatoes. Cut the potatoes in half lengthwise and place them flesh-side down on the baking sheet. Drizzle the oil over the top of the potatoes and sprinkle salt and pepper over the top. Use your hands to evenly spread the oil, salt, and pepper over each potato half. Bake for 35-45 minutes, checking the potatoes with a forkโthe fork should easily pierce the potato. Remove from the oven and set aside. You can season with additional salt and pepper and butter to taste.
Step 3: While the potatoes are cooking, prepare the slaw. Add all of the slaw ingredients in a large bowl and mix until combined.
Step 4: After 4 hours and once the pork is cooked through, use two forks to shred the pork until it is finely shredded. Add the remaining โ cup of BBQ sauce and stir until combined.
Step 5: Add pork and slaw to the top of the potato and add drizzle with additional barbecue sauce.
Step 6: Add any other toppings of choice such as pickled onions, pickles, crispy fried onions, or an additional drizzle of barbecue sauce.

- 1 tablespoon + 1 teaspoon apple cider vinegar
- 2 teaspoons pure maple syrup
