Begin by making the streusel. In a small bowl, combine brown sugar, flour, oats, and cinnamon. Add the cold cubed butter to the flour mixture and use a fork or your fingers to work the butter into the dry ingredients until the mixture forms coarse crumbs. Set aside.

Step 2: In a large bowl, whisk together the wet ingredients: oil, eggs, Greek yogurt, milk, maple syrup, and vanilla until smooth.
