Why You’ll Love This Recipe
- This recipe is a delicious twist on a favorite childhood treat, "scotcheroos." These tasty treats are a perfect balance of sweet and salty, with a few simple ingredient swaps that set them apart from the traditional recipe. These do not include traditional scotcheroo ingredients such as butterscotch chips or corn syrup. Rather, we focus on the peanut butter and chocolate flavor and sweeten with honey.

Ingredient Notes
For the rice krispies base:
- Natural creamy peanut butter - for this recipe, it is best to use natural peanut butter. Natural peanut butter is usually made with just two ingredients–peanuts and salt. Since we’re adding honey to the mixture, we don’t recommend using peanut butter with added sugar, as it can make the treats overly sweet.
- Crispy rice cereal - for this recipe, you can use regular rice krispies or brown rice krispies. If you are gluten-free, ensure that the rice krispies are labeled certified gluten-free.
For the chocolate topping:
- Chocolate chips - the luscious layer of chocolate on top is what makes the entire treat. We recommend using dark or semi-sweet chocolate chips, but if you have milk chocolate on hand that will work too. If you are looking for a gluten and dairy-free brand, we suggest Enjoy Life, Lily’s, or Trader Joe's.

Recipe Variations
- If you want to have a thicker cereal base and chocolate layer, you can make these into a smaller rectangular pan or a square pan instead.
- If you don't love peanut butter, you can use another type of nut butter such as almond butter or cashew butter if desired.

For the full recipe instructions, scroll down to the recipe card at the bottom of the page.
Step 1: Line a 9x13-inch pan with parchment paper to prevent sticking.
In a large bowl, add the peanut butter, honey, vanilla, and salt. Mix well. Add the rice krispies to the peanut butter mixture and mix well.
Step 2: Add the rice krispies cereal mixture to the prepared pan and gently press the mixture until it is across the pan in an even layer. Place the pan in the fridge to chill and start to make the chocolate topping.
Step 3: In a microwave-safe bowl, add the chocolate chips, 2 tbsp peanut butter, and coconut oil. Microwave for 30-second intervals, mixing every 30 seconds, until the mixture is melted and smooth.
Step 4: Take the rice krispies out of the fridge. Spoon the melted chocolate mixture over the rice krispies and spread evenly. Top with flaky sea salt if desired (we love Maldon sea salt).
Place the pan back in the fridge and chill for at least 30 minutes before cutting it into 20 pieces.
