Ingredient Notes
- Natural almond butter or cashew butter - we have found these nut butters to be most consistent with a cookie dough taste, however feel free to swap for any nut or seed butterβeven sunflower butter would work. We also recommend a natural nut butter for best resultsβwe love to buy these in bulk at Costco!
- Maple syrup - we recommend using pure maple syrup, but you can also swap for honey if desired. We don't recommend sugar, brown sugar, or coconut sugar as it will change the consistency of the protein cookie dough bites.
- Vanilla extract
- Vanilla protein powder - we recommend using vanilla powder for this recipe. While there are many opinions for the best protein powder out there, we have really enjoyed Clean Simple Eats* or Just Ingredients* (whey protein powder) or Truvani* (plant-based protein powder/vegan protein powder). Most protein powders have about 20 grams of protein per scoop. We have not tested this recipe with an unflavored protein powder, but it could be an option if you are looking for a less sweet version of this recipe.
- Oat flour - while you can buy oat flour at the grocery store, we like to easily make oat flour at home by pulsing the oats until fine in a blender or food processor. We have not tested this recipe using coconut flour or almond flour.
- Salt
- Chocolate chips - use the chocolate chips of your choice here! Milk, semi-sweet, or dark chocolate chips are all great options. You can also use regular or mini chocolate chips. You can even use mini m&mβs.

Step 1: First start by adding the wet ingredients to a large mixing bowl. Add the nut butter, maple syrup, and vanilla extract and mix until well combined.
Step 2: Next, add the dry ingredients: protein powder, oat flour, and salt and mix until well combinedβit should have a consistency similar to raw cookie dough. Add the chocolate chips and mix until they are evenly incorporated throughout the dough.
Step 3: Use a cookie scoop* or large spoon to form the balls. You can place each protein ball on a piece of parchment paper set on the counter or baking sheet. We like to gently press a few chocolate chips into the top of each protein ball. Enjoy!
Tips & Variations
- Feel free to add chia seeds or ground flax seeds.
- Use peanut butter instead to create a peanut butter cup cookie dough flavor.
- You can also press the dough into a baking dish and cut them into cookie dough protein bars instead of forming them into energy bites.

We recommend storing the protein bites in an airtight container in the refrigerator. You can also freeze the protein bites but make sure to let them sit at room temperature for a few minutes to soften before consuming.
