
Sheet pan meals have become one of our go-to dinner options recently, particularly for busy weeknights. We love being able to throw everything on one sheet pan with minimal prep and put it in the oven to cook until it's ready to eat. This Greek chicken sheet pan dinner with veggies has entered the rotation for us and has quickly become one of our favorite sheet pan recipes. Chicken with fresh veggies and delicious Greek flavors creates the base for a satisfying meal that the whole family will enjoy. We love to serve it alongside lemon rice, pita or pita chips, and roasted potatoes or oven baked fries. We hope it becomes one of your favorite sheet pan dinners too!
What ingredients do you need?
For the sheet pan:
Chicken breast
We prefer to use boneless skinless chicken breasts for this recipe, but you can always use boneless, skinless chicken thighs if preferred. We will be using 1.5 lbs of chicken for this recipe, cut into 1" cubes.
Red bell pepper, red onion, zucchini
This veggie combo is delicious and pairs really well with the chicken, Greek flavors, and lemon dill yogurt sauce. All you have to do is chop them up, season them, and let them roast in the oven!
Chicken marinade ingredients
To make the chicken marinade, we will be using extra virgin olive oil, fresh lemon juice, red wine vinegar, and garlic. We will also be making our own Greek seasoning for this recipe using spices that are pantry staples: oregano, salt, paprika, black pepper, and onion powder. The combination of these ingredients creates delicious Greek flavors for a perfect meal.
For the lemon dill yogurt sauce (optional):
Plain yogurt, fresh lemon juice, garlic, dried dill, salt, and pepper
The lemon dill yogurt sauce uses simple ingredients that really add to the flavor of the Greek chicken and vegetables. We like to use plain Greek yogurt, fresh lemon juice, and minced garlic. We have opted to use dried dill here, but if you prefer fresh herbs you can definitely use fresh dill instead! Just note that you will need to use more fresh dill because the flavor is more concentrated in the dried dill.
Optional toppings:
Depending on your preferences, you may like to top your Greek chicken sheet pan with crumbled feta cheese, lemon slices/wedges of lemon, or kalamata olives. You can add these before or after baking.
What equipment do you need?
To make this Greek chicken sheet pan you will need:
- A rimmed baking sheet and parchment paper
- A cutting board and knife
- A large bowl
- A medium bowl
- Measuring cups and spoons
How do I make this Greek chicken sheet pan?
For the sheet pan:
- Line a large sheet pan with parchment paper and preheat the oven to 425 degrees Fahrenheit.
- Start by chopping the raw chicken breast into 1” cubes and place them in a large bowl.
- Next, chop the bell peppers, onion, and zucchini into pieces similar in size to the chicken. Add them to the bowl with the chicken.
- Add the olive oil, lemon juice, red wine vinegar, minced garlic, and spices to the bowl. Stir well until the chicken and veggies are evenly coated.
- Put the chicken and veggies onto the baking sheet and spread out evenly.
- Place the sheet pan into the preheated oven and bake for 20-22 minutes, or until the chicken is firm and the internal temperature of the chicken reads 165 degrees on a meat thermometer.
For the sauce:
- Measure out the ingredients and place them into a medium-sized bowl. Mix them all together until well-combined.
- Drizzle the desired amount of sauce over each individual serving.
Anything else to consider?
As mentioned above, we love to serve this Greek chicken sheet pan dinner with lemon rice, pita or pita chips, and roasted potatoes or oven baked fries for a more complete meal.
If you have leftovers, store the chicken and vegetables separately from the yogurt sauce. We recommend to store both in an airtight container in the refrigerator and to consume within 3-4 days.
Is this recipe (GF/DF)?
This recipe is gluten-free and can easily be made dairy-free. For our dairy-free friends, simply omit the yogurt sauce or replace the Greek yogurt with your favorite dairy-free yogurt.
