These No-Bake cookies are our spin on the classic No-Bake cookies—we’ve switched up a few ingredients and made them festive with the addition of Cadbury Eggs on top! Every year when Valentine’s wraps up and the Easter candy starts lining the shelves, I head to my local store and buy a bag…or five. These Cadbury Egg No-Bake cookies are simple and don’t require much work at all, which makes them the perfect treat to take to a friend, neighbor, or Easter get-together. If you’re reading this post and it’s no longer Easter, feel free to leave the Cadbury Eggs out and you’ll still have delicious No-Bake cookies!
What ingredients do you need?
Natural Peanut Butter
Natural peanut butter gives these no-bake cookies the flavor you know and love! We use natural peanut butter for this recipe which has 2 ingredients: peanuts and salt! Costco has a great price on their organic natural peanut butter and it is our absolute favorite. You can also use the classic Jiff in this recipe, but note that the final result may differ slightly in consistency.
Coconut Oil
Coconut oil replaces butter from the traditional no-bake cookie recipe. This is great news if you’re dairy-free! If you’re not a fan of coconut oil or have an allergy, you could replace it with the same amount of butter.
Pure Maple Syrup
Pure maple syrup is the sweetener for this recipe! You could also swap it for honey. A little sweetener goes a long way in this recipe.
Cocoa Powder
Cocoa powder finishes off the flavor in the no-bake cookies and gives them the right amount of chocolate flavor.
Salt
Just a pinch of salt is all you need to balance out the richness of the peanut butter and the sweetness of the maple syrup.
Vanilla Extract
An essential for any good cookie!
Old-fashioned Oats
For this recipe, you will use old-fashioned oats. My favorite place to get oats is Costco! I love the brand they carry called One Degree.
Coconut Shreds
The typical no-bake cookies don’t have coconut, but we love adding it to this recipe. It helps the cookies to look more like “bird’s nests” for Easter with the Cadbury Eggs on top.
Cadbury Eggs
And last, but not least, Cadbury Eggs! You can put 1-3 Cadbury eggs on top depending on your preference. Often I will make smaller bite-sized cookies and just add one on top.
What equipment do you need?
For this recipe, you will need the following equipment:
- Medium-sized pot or mixing bowl
- Rubber spatula
- Measuring cups and spoons
- Parchment paper
- Baking sheets
- Cookie scoop or spoon
How is it done?
These cookies are simple and come together in a pinch!
- Line a cookie sheet with parchment paper.
- You have two options: use a medium pot over the stove, or a medium-sized mixing bowl in the microwave.
- For the stove: In a medium pot, add the peanut butter, coconut oil, and pure maple syrup. Turn the stove on low heat and stir until the ingredients come together and the mixture is smooth. Remove the pot from heat.
- For the microwave: Microwave the mixture in a microwave-safe bowl in increments of 20 seconds, stirring between, until the mixture is melted and smooth.
- Next, add the cocoa powder, salt, and vanilla. Mix until smooth.
- Add the oats and coconut shreds and mix until all of the oats are fully coated.
- Using a standard cookie scoop, scoop each cookie onto the parchment paper-lined baking sheet. A standard-size cookie scoop will create about 13 cookies. Immediately add 2 Cadbury eggs on top of each cookie and softly press into the cookie.
- Refrigerate for 20 minutes before serving, or until the cookies have hardened and are no longer shiny on top.
- NOTE: Because the peanut butter and coconut oil both soften at room temperature, these no-bake cookies should stay in the fridge or freezer until just before serving, or else they will become soft.
Anything else to consider?
