- Kale - we love using kale in this recipe because we love the way that it crisps up when baking! You can buy pre-shredded kale to save time if needed. If you aren't a big fan of kale, you can always swap it out with fresh spinach. We would recommend adding the spinach at the same time as the eggs in this case as it cooks more quickly.
- Chicken sausage - there are several great chicken sausage options out there. We have tried and liked the ones from Aidells, Gilbert's, Applegate, and Target's Good and Gather brand. You can always swap it out with breakfast sausage or turkey sausage if you like those better. We love this recipe with chicken apple sausage specifically. Recipe Variations
- We love that this recipe can be easily adapted to what you have on hand. If you have some Brussels sprouts or mushrooms in your fridge that are on their way out, feel free to swap them out with one of the other vegetables!
- This recipe has just a touch of spice from the chili powder used to season the vegetables. If you are a fan of spice, we recommend adding your favorite hot sauce when eating or to increase the amount of chili powder used.
How to Make the Perfect Sweet Potato Hash

Step 1: Line a baking sheet with parchment paper and preheat the oven to 425 degrees Fahrenheit.
Cut the sweet potatoes into ½” cubes. Dice the bell pepper and onion and chop the kale into shreds. Slice the chicken sausages into ½” rounds.
Place the veggies and chicken sausage into a large mixing bowl. Add the tablespoon of oil, the chili powder, garlic powder, salt and pepper to the bowl.
Step 2: Toss until evenly coated.
Step 3: Add the sausage and sweet potato mixture to a parchment lined baking sheet and spread it in an even layer across the pan.
Place the pan into the oven and cook for 17-20 minutes, or until the sweet potatoes are starting to become soft.
Step 4: Pull the pan out of the oven and create 8 wells. Crack an egg into each well and place the pan back into the oven for about 4-8 minutes.
Step 5: The egg whites should be wobbly but set and not liquidy.
