Spread a generous layer of Dijon mustard on the bottom halves of the rolls. Layer the sliced turkey and a slice of white cheddar on top of the mustard. Leave the top halves plain for now โ toasting them at the same time helps them get lightly golden without sealing the sandwiches shut.
